We will be pairing our beers with several delicious courses from Salt of the Earth.  Dinner will start at 7 pm with 3 different passed canapes and a full glass of Victory Hop Devil.

Beer and Food Menu:

1. Turnip, radish, onion, pickled mustard seed and potato salad, dressed with soubise and pickled ramp bulbs. Paired with Swing Session Saison.

2. Squab, served skinless, wrapped in braised ramp leaves with brown butter, fava beans and raw kohlrabi. Paired with Golden Moneky

3. Lamb Navarin, lamb jus, spring peas, carrots, pear onions and puff pastry. Paired with Headwaters Pale Ale.

4. Hop Meringue, vanilla Anglaise, orange ice cream, lemon oil, mint, flowers. Paired with Yakima Glory.

The Victory Brewing Story

The story of Victory Brewing Company starts on a school bus in 1973 when fifth-graders Ron Barchet and Bill Covaleski stepped aboard, on their way to a new school. The two became fast friends and remained so, even as they grew up and went to college on opposite coasts. Just months out of college, Bill’s appreciation of good beer and access to his father’s home brewing equipment inspired him to explore the hobby.
