Organic Egg Spread

Kids home for lunch? This is a great sandwich filling and also works as a dip.

2 tablespoons mayonnaise
3 tablespoons Seven Stars Plain Yogurt
½ teaspoon Worcestershire sauce

3 local organic eggs, hard-cooked, peeled and chopped
2 ounces medium-firm tofu, drained and diced
¼ cup minced organic celery
¼ cup minced onion
1 tablespoon local fresh parsley
1 tablespoon local fresh dill
¼ teaspoon freshly ground black pepper
¼ teaspoon sea salt
½ cup sweet local peas

In a medium bowl, mix mayo, yogurt and Worcestershire sauce. Add egg, tofu, celery, onion, herbs, salt and pepper and mix well. Gently stir in peas. Cover and chill.
Serves 4.
