Farm Manager's Sweet Beet Hummus
(adapted from Madhur Jaffrey's World Vegetarian)

1 medium to large beet (or 2 smaller ones)
4 tablespoons chopped walnuts
1 slice of stale or toasted white bread, or a small boiled potato
1 garlic clove, peeled and coarsely chopped
6 tablespoons red wine vinegar
1/2 teaspoon salt, or to taste
Chop beet into large pieces and steam or boil until tender. Combine all ingredients in a food processor or electric blender. Blend until smooth. Serve with crusty bread. Tastes great room temperature.
